It's not impossible, but it is difficult to find the game and running it properly on emulator. I wouldn't get your hopes up too soon about Wallace or Knives, at least not from me. I assume they would have to be extracted from their DLC files because unlike the Extra Modes which I am assuming were done before Knives DLC was released, but held back because money , they were not with the rest of core game's graphics.
